This is by far THE BEST recipe EVER! My husband and I crave this meal all the time! It is super easy, and is WAY better than traditional take-out! Be sure to make extras to eat as leftovers...otherwise, you will be sorry! :) Enjoy!
Chicken:
3-6 boneless, skinless chicken breasts cut into bite-size pieces)
1/2 cup flour
1 cup cornstarch
garlic salt (couple dashes)
pepper (couple dashes)
1 egg
2 Tablespoons milk
chopped green peppers, onion, and green onions (for later)
Directions:
Preheat oven to 350. In a large zip lock bag, combine flour, cornstarch, garlic salt, pepper. Add chicken and coat each piece. Combine egg and milk in a medium bowl. Add floured chicken to the egg mixture. Heat oil in a frying pan and cook chicken until golden brown. Once brown, place chicken in a baking dish and set aside.
Sauce:
1/4 cup chicken broth
2 Tablespoons soy sauce
1/4 cup ketchup
3/4 cup sugar
Combine all sauce ingredients in a saucepan over medium heat until sugar dissolves. Pour sauce mixture over chicken and top with peppers and onions. Bake uncovered for about 1 hour. Serve over rice.
* Feel free to make a second batch of the sauce (if you'd like) to spoon over the chicken and rice right before serving
